How to Cook Lion's Mane Scampi

Ingredients

  • ½ pound Lion's mane mushroom (sliced into shrimp sized pieces)
  • 8 oz linguini or spaghetti
  • 3 tablespoons of olive oil
  • ½ cup of dry white wine
  • ¾ cup vegetable stock 
  • 5 minced garlic cloves
  • Lemon juice
  • Parmesan cheese (or vegan parmesan, nutritional yeast, bread crumb)
  • 1 parsley
  • Salt pepper and red chili flakes: to taste

Equipment

  • Pasta pot
  • Large skillet (preferably non-stick)

Instructions

1. Preparing The Spaghetti

Fill a large pasta pot with water, add some salt, and bring it to a boil. Once the water is boiling, add the pasta and cook according to your preference (al dente or soft), but make sure it is not overdone. Drain the water, drizzle some olive oil, and set aside.

2. Preparing The Mushroom

Heat one tablespoon of olive oil in a large skillet or pan. Once heated, add the sliced Lion's mane mushroom and sear for roughly 2 minutes on each side. Add one tablespoon of lemon juice, salt, and pepper per your preference. Remove from heat and set aside.

3. Preparing The Scampi

Heat 2 tablespoons of olive oil over medium heat in the same large skillet. Add the minced garlic cloves and sauté till they are straw-colored (this will take about a minute). 

Add the white wine and reduce the heat. Simmer until the liquid reduces to half, about 3 minutes. Now add the vegetable broth and lemon juice. Again, let this simmer for 5 minutes till it is glossy and thick.

4. Finishing Up

Add the cooked spaghetti to the skillet and toss until thoroughly combined.  To reach the desired consistency, you can add the drained pasta water (see additional notes). Next, add in Lion's mane mushroom and mix it before serving.

Remove from heat and transfer to a plate—top with parmesan cheese and parsley. Serve hot, and enjoy!

Do not throw away the drained pasta water. Instead, you can use it to stretch your sauce if required. Moreover, you can spoon some pasta water until your scampi reaches the desired consistency.
